“Real-deal Chocolate Chip Cookies”
Ingredients:
1/4 cup of palm shortening (I used coconut oil), melted
1 egg at room temp
1/4 cup coconut crystals (I use 1/4 cup 100% Maple Syrup or sometimes Coconut Sugar – (Found at Freds)
2 tbls honey
2 tsp pure vanilla
1 1/2 cups blanched almond flour
2 tbls coconut flour
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup dark chocolate pieces
1/4 cup dairy free chocolate chips (For the chocolate I used 1/2 cup of dark chocolate)
Method:
1. Preheat oven to 350
2. Mix coconut oil and egg in mixer or food processor
3. Add Coconut Crystals (coconut sugar or maple syrup), honey and vanilla, and mix until combined
4. Add flours, baking soda, and salt and mix well
5. Scrape down sides if needed
6. Hand stir in chocolate
7. Use a large tablespoon or scoop to form balls of dough. Lightly flatten down
8. Bake for 10 min
Each batch yields 1 Dozen

You could modify ingredients by adding raisins, or nuts instead of chocolate! Have fun with it!
