One of our FAV Paleo Cupcakes and super simple to make!
4 eggs at room temp
1/2 cup honey (raw if you can)
1 tbls coconut milk at room temp (if your not used to coconut milk, make sure you shake can before opening)
3 tbls melted raw cacao butter (we just use butter!)
2 tsp pure vanilla
1/2 cup coconut flour sifted
1 1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp sea salt
1. Preheat oven to 350 degrees. Line a 12 cup muffin pan with baking cups
2. Place we ingredients in a mixer and beat on medium until frothy and fully incorporated
3. Add dry ingredients, beating until combined
4. Spoon batter into muffin tins, filling 2/3 full
5. Bake for 18 min
